Another
of Poderi Tognetti’s most
important supply chain projects is pig breeding
and the processing of pork.
In this context too, a key feature is traceability
and management of the entire chain, starting from
the production of feed for animals, breeding, and
processing of the meat so obtained.
The breeding of native Tuscan "Cinta
Senese" swine takes place in a semi
wild state in the wooded area of approximately 90
hectares belonging to the Sapito farm. Breeding
is in large enclosures where the animals live free,
provided with water from reservoirs, feeders and
shelters built with natural materials. The breeder
supervises the animals during their various stages
of growth, assuring them a carefully balanced diet
of the undergrowth of natural herbs and berries,
and a daily fodder of mixed grain ground in our
own mill.
Traceability
of the production chain and high quality to safeguard
the consumer, is the guiding principle of the entire
Tognetti organisation.
The processing laboratories, curing cells and packaging
clean-room ensure that the aroma of the cold meats
reaches the table.
Each stage of processing can be traced
from the animal to the finished cold meat product,
by means of the code on the label.
These meats have a typical taste given by the characteristics
of the meat, and especially the fat of the animal,
and by the Tognetti family’s
secret and traditional Tuscan recipes,
giving the products a unique flavour.
